Ingredients
- 2 yellow onions
- 900 g roasting potatoes
- 3 tbsp unsalted butter
- 300 ml 35% fat heavy cream
- 2 tbsp dry wheat breadcrumbs
- 200 g drained canned Scandinavian spice-cured sprat fillets
- 45 ml packing liquid from the spice-cured sprats
Preparation
Preheat the oven to 225 °C conventional. Peel and slice the onions. Peel the potatoes and cut into even thin matchsticks. Drain the sprats, keeping the liquid. Weigh the listed quantity of drained fillets and measure the stated packing liquid from the same cans. Use Scandinavian spice-cured sprats, not Mediterranean salted anchovies.
