Ingredients

  • 0.25 g ground coriander seeds
  • 113 g runny rosemary honey
  • 75 g raw blanched almonds
  • 5 g whole anise seeds
  • 3 g ground cinnamon
  • 50 g drinking water
  • 50 g raw blanched hazelnuts
  • 19 g whole sesame seeds
  • 50 g white sugar
  • 25 g icing sugar
  • 100 g bought fine dried breadcrumbs
  • 0.25 g ground cloves

Preparation

  1. Preheat the conventional oven to 160 °C. Spread hazelnuts and almonds on a tray and toast for about 12 minutes until lightly golden without burning. Cool for 15 minutes, then grind finely in pulses without turning into oily butter. Grind anise in a spice grinder and mix with nuts, cinnamon, cloves, coriander and sesame.

  2. Heat water and white sugar for about 5 minutes, then boil for 1 minute to dissolve without caramelising. Cool for 15 minutes. Warm honey gently for about 3 minutes, then bring to its first boil for 1 minute. Pour over nuts and spices, add breadcrumbs and all cooled syrup and mix thoroughly into an even paste. Cool for about 20 minutes before handling, without touching hot honey with bare hands.

  3. Take dough portions of about 29 g, giving roughly 16 small alfajores. Roll into cylinders about 5 cm long and 2.5 cm across. Coat lightly in icing sugar without mixing the sugar left in the plate into the dough. Set on paper and dry for about 120 minutes before serving.
