Ingredients

  • 2 garlic cloves
  • 150 g onion
  • 70 g green pepper
  • 400 g cleaned raw squid, tubes, tentacles and fins
  • 4 g food-grade squid ink
  • 400 ml water
  • 40 g olive oil
  • 1 pinch of ground black pepper
  • 120 g dry long-grain white rice
  • 1 pinch of fine salt
  • 50 g plain crushed tomatoes
  • 75 ml dry white wine

Preparation

  1. Wash the pepper. Deseed the pepper. Peel the onion and garlic, then chop them with the pepper. Check the cleaned squid, removing any remaining quill or beak, then pat dry. Cut the tubes into rings and the tentacles and fins into pieces. Heat the weighed oil in a casserole and cook garlic for 1 min. Add onion, pepper and salt and cook for 10 min over medium heat.
