Ingredients

  • 2 bay leaves
  • 3 garlic cloves
  • 1 onion
  • 1 sweet potato
  • 1 small kabocha squash
  • 1 sweet pepper
  • 1 potato
  • 3 tomatoes
  • 500 g stewing beef
  • 1 beef stock cube
  • 6 dried peach halves
  • 1000 ml water
  • 500 ml water — optional
  • 2 fresh corn cobs
  • 1 tbsp vegetable oil
  • 1 pinch of salt

Preparation

  1. Peel and chop the onion and garlic. Deseed and chop the pepper. Peel and chop the tomatoes. Peel the squash, potato and sweet potato; remove the squash seeds and dice the flesh. Dice the beef to a similar size. Cut the raw corn kernels from the cobs and chop the dried peaches.

Use for the recipe: half a small kabocha squash (prepare 1 small kabocha squash).

    3 garlic cloves
    1 onion
    1 sweet potato
    half a small kabocha squash
    1 sweet pepper
    1 potato
    3 tomatoes
    500 g stewing beef
    6 dried peach halves
    2 fresh corn cobs
    • knife
    • chopping board
    • peeler
  2. Heat the oil in a casserole and soften the onion. Add the beef and brown it. Stir in the pepper, tomatoes and garlic, then the bay leaves. Add the water and stock cube. Bring to a simmer, cover and cook for about 60 minutes.

    2 bay leaves
    1 beef stock cube
    1000 ml water
    1 tbsp vegetable oil
    • saucepan with lid
    • spoon
  3. Add the squash, potato and sweet potato. Cook covered for about 20 minutes more. If the liquid has reduced too much, add the optional extra water a little at a time, only as much as needed to prevent sticking.

    500 ml water — optional
    • saucepan with lid
    • spoon
  4. Add the corn kernels and dried peaches. Simmer for about 10 minutes, until the corn, vegetables and beef are tender. Taste and adjust the salt. Remove the bay leaves before serving hot.

    1 pinch of salt
    • saucepan with lid
    • spoon
