Ingredients

  • 340 g canned pineapple rings in juice, drained weight
  • 35 g pitted red candied cherries
  • ¼ tsp ground ginger
  • 105 g unsalted butter
  • 113 g whole milk
  • 1 large egg
  • ¼ tsp ground cinnamon
  • 5 ml vanilla extract
  • 150 g white wheat flour
  • 2 tsp baking powder
  • ½ tsp fine salt
  • 149 g white sugar
  • 106 g soft light brown sugar

Preparation

  1. Soften butter and take egg and milk out of the fridge for about 20 minutes. Grease a solid round 23 cm tin with 5 g butter. Melt 57 g butter in a saucepan for about 5 minutes, mix with brown sugar, cinnamon and ginger and spread over the base. Drain the pineapple and weigh the listed drained amount. Arrange it with the cherries, cutting some rings if needed to use all fruit without thick overlaps.

Gently spread over fruit. Bake for about 35 minutes in a preheated conventional oven at 190 °C. A skewer in the centre should carry no raw batter.
