Ingredients

  • 1 parsley sprig
  • 1 carrot
  • 5 garlic cloves
  • 1 leek
  • 100 g raw pork belly
  • 600 ml water
  • 45 ml olive oil
  • 300 g seedless white grapes
  • 1 pinch of fine salt
  • 350 g day-old wheat country bread
  • 1 spring onion
  • 50 g Spanish chorizo for cooking

Preparation

  1. Trim and wash the spring onion and leek. Peel and wash the carrot. Chop the vegetables and put them in a pan with all the water, salt and 2 unpeeled garlic cloves. Simmer for 15 min and strain. Measure 150 ml of cooked stock and sprinkle over sliced bread to moisten without soaking. Cover with a clean cloth and let absorb for about 10 min while preparing the next stage.

    1 carrot
    5 garlic cloves
    1 leek
    600 ml water
    1 pinch of fine salt

  2. Peel and chop the remaining 3 garlic cloves. Dice belly and chorizo. Heat 30 ml of oil in a large frying pan, colour garlic gently for about 5 min, then add belly and chorizo and cook for about 5 min until browned and cooked through. Remove solids with a slotted spoon, keeping oil and rendered fat in the pan.
