  • 454 g mochiko glutinous rice flour
  • 383 g full-fat unsweetened coconut milk

  1. Take the eggs out of the refrigerator and leave in their shells for 20 minutes to lose their chill.

  2. Heat the conventional oven to 180 °C. Grease a 33 × 23 cm dish with 5 g butter. Gently melt the remaining 113 g for about 5 minutes, then cool for 10 minutes.

  3. Mix mochiko, baking powder and salt in a bowl. In a mixing bowl, stir the room-temperature eggs and sugar with a whisk without adding air. Stir the coconut milk until homogeneous, then weigh the listed amount. Add it with unsweetened evaporated milk, vanilla and reserved cooled melted butter. Mix in the dry ingredients and scrape until smooth and lump-free. Pour into the dish and level.
