Ingredients

  • 4 slices of fresh ginger
  • 1 spring onion
  • 900 g raw bone-in pork ribs
  • 1 tbsp dried goji berries — optional
  • 12 cups of water
  • 1 g salt — optional
  • 450 g fresh lotus root

Preparation

  1. Cover the pork ribs with cold water in a bowl and soak for 60 min. Rinse and drain. Bring a pot of water to a boil. Add the pork and, once the water returns to a boil, cook for 1 min. Drain, discard this water and rinse the ribs to remove the scum.
