Ingredients

  • 75 g fresh enoki mushrooms
  • 1 napa cabbage
  • 1 leek
  • 4 eggs
  • 400 g raw very thinly sliced beef
  • 1 tsp toasted sesame oil
  • 100 ml cooking mirin
  • 150 g cooked udon noodles
  • 100 ml soy sauce

Preparation

  1. Cut the tofu into bite-sized pieces. Clean the mushrooms, remove the compact base from the enoki and cut the oyster mushrooms into pieces. Score a cross on the shiitake caps. Wash the cabbage and cut into pieces about 5 cm across. Clean the leek, rinsing between the leaves, and thinly slice its white part diagonally.
