Ingredients

  • 1 bunch of parsley
  • 600 g plain uncooked fermented sauerkraut
  • 1 bay leaf
  • 1 garlic clove
  • 2 medium onions
  • 1 apple
  • 2 tbsp unsalted butter
  • 300 ml ready-to-use liquid vegetable broth
  • 2 pinches of ground black pepper
  • 2 pinches of fine salt
  • 2 tbsp granulated sugar
  • 150 ml dry white wine
  • 6 juniper berries
  • 2 cloves

Preparation

  1. Soak the sauerkraut in cold water to soften its acidity, then drain and squeeze it with your hands. Peel the onions and garlic. Slice the onions, chop the garlic and dice the apple piece, removing its core. Wash the parsley.

Use for the recipe: half a garlic clove (prepare 1 garlic clove).

Use for the recipe: a quarter of an apple (prepare 1 apple).

  3. Add the sauerkraut, white wine, broth, salt and pepper. Add the parsley, bay leaf, cloves and juniper berries. Cover and braise gently for up to 80 minutes, stirring occasionally, until tender. Avoid a hard boil that would evaporate the liquid too quickly.
