Ingredients

  • 425 g salted butter
  • 90 ml whole milk
  • 2 large eggs
  • 60 g unsweetened cocoa powder
  • 240 ml water
  • 10 ml vanilla extract
  • 240 g white wheat flour
  • 57 g shelled pecans
  • ¼ tsp fine salt
  • 397 g white sugar
  • 397 g icing sugar
  • 1 tsp baking soda
  • 120 ml plain unsweetened buttermilk

Preparation

  1. Preheat a conventional oven to 180 °C and use an ungreased 33 × 46 cm rimmed metal tray. Mix flour, white sugar and salt. Bring water to the boil for about 5 minutes. Cut the butter into pieces. Melt 227 g butter with 30 g cocoa in a saucepan for about 5 minutes, stirring. Add boiling water, bubble for 30 seconds and remove from heat. Pour over dry ingredients and stir to cool slightly.

  2. Beat eggs and mix with buttermilk, baking soda and 5 ml vanilla. Stir into the slightly cooled batter without overmixing. Spread on the tray and bake for about 20 minutes. A centre skewer should carry moist crumbs but no raw batter. Make icing during the last 5 minutes of baking to pour it hot as soon as the cake comes out.

Off the heat add milk, the remaining 5 ml vanilla, sifted icing sugar and chopped pecans. Stir smooth and pour at once over the warm cake.
