Ingredients

  • 500 g raw carrots
  • 2 cups of whole milk

  • 2 tbsp raisins — optional
  • half a cup of sugar
  • 2 tbsp extra sugar — optional

  1. Wash, peel and finely grate the carrots. If using the nuts, dry-toast them over low heat in a frying pan until crunchy. Let cool, then chop.

  2. Bring the milk to a boil in a heavy saucepan. Add the carrots and cook over medium heat, stirring often, until the milk is absorbed and evaporated. Watch closely and stir more frequently towards the end to prevent scorching.
