Ingredients
- ¼ tsp freshly grated orange zest
- 8 cups of water
- 2 cups of dried adzuki beans
- 2 tbsp small dried tapioca pearls
- half a cup of sugar
Preparation
Rinse the beans and cover generously with cold water in a bowl. Soak for at least 480 min. Drain and discard the soaking water.
2 cups of dried adzuki beans- mixing bowl
- colander
Put the drained beans and 6 cups of water in a saucepan. Bring to a boil, then simmer for about 60 min, until the beans are very soft and begin to break apart. During cooking, gradually add the reserved 2 cups of water to keep the soup loose.

Wash an orange, finely grate its zest without the white pith and measure the listed amount. Briefly blend with a hand blender to break up some of the beans without making a completely smooth purée. Add the sugar and orange zest and stir over medium heat to dissolve the sugar. Add the tapioca and simmer for about 20 min, stirring, until the pearls are completely translucent. Serve hot.
