Ingredients

  • 1 tsp fresh garlic
  • 3 large onions
  • 3 tbsp niter kibbeh, Ethiopian spiced clarified butter
  • 1 shelled hard-boiled egg — optional
  • 100 g ready-to-eat quant’a dried beef
  • 1 tsp vegetable stock powder
  • 4 cups of water
  • 1 cup of vegetable oil
  • 1 tsp ground black pepper
  • 1 tsp dried rosemary
  • 1 tbsp berbere spice blend
  • 3 small rolls of cooked injera

Preparation

  1. Cut the dried beef into pieces. Heat in a dry frying pan for about 4 min, stirring, then set aside. Peel and chop the onions and garlic. Measure the garlic after chopping.

    • chopping board
    • frying pan
    • spoon
  2. Heat the oil in a casserole. Cook the onions for about 12 min, until translucent. Add the garlic, stock powder, rosemary and pepper and cook until the onions start to brown. Add 1 cup of water and reduce for 2 min. Add the berbere and 2 cups of water. Simmer for 3 min, then add 1 cup of water and the niter kibbeh. Simmer for 5 min.

    1 tsp ground black pepper
    1 tsp dried rosemary
    1 tbsp berbere spice blend
    • casserole with lid

  3. Tear the injera into pieces. If using the cooked, shelled egg, cut it up and add to the sauce to warm through. Return the dried beef, then add the injera. Fold gently to soak the bread without making it mushy and serve immediately.
