Ingredients

  • 1 unwaxed lemon
  • 1 unwaxed orange
  • 10 g unsalted butter
  • 1 l whole milk
  • 5 eggs
  • 2 sheets of all-butter puff pastry
  • 150 g blanched flaked almonds
  • 1 cinnamon stick
  • 1 tsp water
  • 70 g cornstarch
  • 150 g caster sugar
  • 30 g icing sugar

Preparation

  1. Wash the citrus fruit. Peel 2 broad strips of zest from each, avoiding the white pith. Bring the milk, peel, cinnamon and butter to a simmer. Remove from the heat and strain. Separate the eggs, reserving 5 whites for the custard and 1 yolk for glazing.

  2. Mix the sugar and cornstarch in a bowl. Whisk in a little infused milk, then the reserved whites. Gradually add the remaining milk. Return to the pan and stir until thick with the first bubbles. Spread in a shallow dish, cover the surface, cool for about 15 minutes, then refrigerate for about 60 minutes until cold.

Add the lid and press the edges closed. Brush with the remaining glaze and add the almonds and 15 g icing sugar.
