Ingredients

  • ½ tsp ground coriander
  • 1 large onion
  • 1 hot green chilli
  • 250 g fresh ripe tomatoes
  • 100 g ready-to-use plain soft cheese spread
  • 3 large raw eggs
  • 1 tbsp sun-dried tomato paste
  • ½ tsp ground cumin
  • ¼ tsp ground turmeric
  • 60 ml water — optional
  • 1 pinch of dried chilli flakes — optional
  • 2 tbsp olive oil
  • ½ tsp hot smoked paprika
  • 1 pinch of ground black pepper — optional
  • ⅛ tsp salt
  • 1 pinch of sugar

Preparation

  1. Peel and finely chop the onion. Wash the tomato and chilli. Chop the tomato, keeping its juices. Remove the chilli stalk and slice the chilli finely. Lightly beat the eggs in a small bowl.

    1 large onion
    1 hot green chilli
    250 g fresh ripe tomatoes
    3 large raw eggs
    • knife
    • chopping board
    • small bowl
    • whisk
  2. Heat the oil in a frying pan. Add the onion and salt and cook for about 5 min, until soft and lightly golden. Add the chilli, cumin, coriander, turmeric and smoked paprika. Stir for about 1 min. Add the tomato with its juices, tomato paste and pinch of sugar. Cover and reduce for about 10 min, stirring occasionally, until thick. If it dries too soon, add the optional measured water and continue reducing.

    ½ tsp ground coriander
    1 tbsp sun-dried tomato paste
    ½ tsp ground cumin
    ¼ tsp ground turmeric
    60 ml water — optional
    2 tbsp olive oil
    ½ tsp hot smoked paprika
    ⅛ tsp salt
    1 pinch of sugar
    • large frying pan
    • spoon
    • lid
  3. Lower the heat and pour the beaten eggs into the tomato base. Gently fold with a spatula for about 1 min, forming soft curds. Spread the ready-to-use soft cheese over the top. Let it melt gently for about 2 min, until the eggs are just set with no liquid raw egg, yet still soft. Remove from the heat. Add the optional pepper and chilli flakes if using. Serve immediately.

1 pinch of dried chilli flakes — optional
1 pinch of ground black pepper — optional
