Ingredients

  • 1 white cabbage
  • 500 g uncooked sauerkraut, drained weight
  • 200 ml water for the porcini
  • 1 onion
  • 1 apple
  • 50 g butter
  • 300 g fresh pork belly
  • 300 g cooked Polish smoked sausage
  • 500 ml beef stock
  • 10 g dried porcini
  • ½ tsp caraway seeds
  • ≈ ¼ tsp ground black pepper
  • 2 g fine salt
  • 1 tbsp brown sugar
  • 400 g canned peeled tomatoes
  • 1 tsp juniper berries

Preparation

  1. Wash the cabbage leaves. Drain the sauerkraut. Remove damaged leaves and the tough core from the white cabbage, then shred it. Peel and chop the onion. Dice the pork. Crush the juniper berries in a mortar.

Use for the recipe: half a white cabbage (prepare 1 white cabbage).

    half a white cabbage
500 g uncooked sauerkraut, drained weight
    1 onion
    300 g fresh pork belly
    1 tsp juniper berries
    • colander
    • knife
    • board
    • mortar
  2. Melt the butter in a casserole. Soften the onion over medium heat for about 8 minutes. Add the juniper, caraway, pork and sugar. Cook, stirring, for 5 minutes until the meat starts to brown.

    50 g butter
    ½ tsp caraway seeds
    1 tbsp brown sugar
    • casserole
    • spoon
  3. Add the sauerkraut, white cabbage, tomatoes with their juices and stock. Break up the tomatoes with the spoon. Bring to a simmer, cover and cook gently for 30 minutes. Meanwhile, pour the hot water over the porcini in a bowl and soak for 20 minutes.

    500 ml beef stock
    10 g dried porcini
    400 g canned peeled tomatoes

    • bowl
  4. Drain the porcini, keeping the soaking water. Filter it through muslin to remove grit. Chop the mushrooms and slice the sausage. Peel, core and grate the apple. Add them all to the casserole with the filtered water, salt and pepper. Cover and simmer gently for about 90 minutes until the pork and cabbage are tender. Stir occasionally. Uncover towards the end if the sauce is too watery.
