Ingredients

  • 1 packet of prepared lemon zest baking mix
  • 170 g unsalted butter
  • 500 g whipping cream
  • 4 medium eggs
  • 150 ml cold water
  • 170 g plain flour
  • 2 packets of powdered gelatine for 500 ml
  • 50 ml bottled lemon juice
  • 2 tsp baking powder
  • 1 pinch of fine salt
  • 350 g granulated sugar
  • 16 g vanilla sugar
  • 1000 g quark with 40% fat in dry matter

Preparation

  1. Let the butter soften. Line the base of a 28 cm springform tin with baking paper. Heat the conventional oven to 180 °C. Mix the flour and baking powder, then add 170 g sugar, 8 g vanilla sugar, salt, butter and cracked eggs. Beat for 2 minutes until smooth. Spread in the tin and bake for about 25 minutes. Turn out onto a wire rack and cool completely.

  2. Mix the gelatine with the cold water and leave to bloom for 5 minutes. Mix the quark with 180 g sugar, 8 g vanilla sugar and the lemon zest mix. Gently warm the gelatine until dissolved, without boiling, then add the lemon juice. Whisk a little quark into the gelatine to temper it, then whisk back into the remaining quark. Whip the cold cream and fold it in gently.
