  • 1 cup of orange juice
  • 80 g raisins
  • 1 cup of sugar
  • 1 tsp bicarbonate of soda
  • ½ tsp ground cloves

Preparation

  1. Preheat the fan oven to 170 °C. Line a 28 cm round cake tin with baking paper. Whisk the oil and sugar in a bowl. Mix the orange juice and bicarbonate of soda in another tall container: it will foam.

  2. Chop the walnut kernels. Mix the flour, cinnamon, cloves, raisins and walnuts in a bowl. Pour the foaming juice into the oil and sugar mixture. Gradually fold in the dry ingredients to make a thick, evenly mixed batter.

    80 g walnut kernels
    3 cups of self-raising flour
    80 g raisins
    ½ tsp ground cloves
    • mixing bowl
    • spatula
    • knife
    • chopping board
  3. Pour into the tin and smooth. Bake for about 60 min, checking from 45 min: a skewer inserted in the centre should come out without wet batter. Cool completely for about 60 min before unmoulding and cutting.
