Ingredients

  • 2 carrots
  • 2 onions
  • 2 tbsp clarified butter
  • 1500 g raw bone-in pork shoulder with rind
  • 300 ml malty dark beer
  • 300 ml prepared vegetable stock
  • 1 tsp caraway seeds
  • 1 pinch of ground pepper
  • 1 pinch of salt

Preparation

  1. Preheat the oven to 160 °C conventional. Peel onions and carrots and roughly chop. Pat the shoulder dry and lightly score the rind in a diamond pattern without cutting deeply into the flesh. Rub with all the salt and pepper.

  2. Heat all the clarified butter in an oven- and hob-safe roasting pan. Sear the shoulder on the rind side, then the other side, for about 10 minutes in total. Add onions and carrots around it, sprinkle with caraway and pour in all the stock and beer. Leave the rind facing upwards.

    2 tbsp clarified butter
    300 ml malty dark beer
    300 ml prepared vegetable stock
    1 tsp caraway seeds
    • oven-safe sauté pan suitable for the hob
    • kitchen tongs
    • spoon
  3. Place on a low oven shelf and roast for about 240 minutes. Baste regularly with the pan juices. The meat should be very tender and release easily from the bone, with crisp crackling. Extend cooking if needed while watching the liquid.

  4. Lift out the meat and rest for 10 minutes, loosely covered to keep the crackling crisp. Meanwhile blend the vegetables and all the juices in a deep container, then strain. Reheat the sauce if necessary. Lift the meat from the bone, slice and serve with crackling and sauce.
