Ingredients

  • 1 unwaxed lemon
  • 100 g unsalted butter
  • 600 ml whole milk
  • 2 medium eggs
  • 5 ml vanilla extract
  • 150 g white wheat flour
  • 200 ml sunflower oil
  • 74 g unsweetened cook-and-serve vanilla pudding powder
  • 1 g fine salt
  • 260 g white sugar
  • 8 g vanilla sugar
  • 1000 g plain low-fat quark

Preparation

  1. Wash the lemon and finely grate its zest, avoiding the white pith. Soften butter for 20 minutes. Crack and beat eggs. Mix pudding powder with 100 ml milk from the total. Combine quark, 200 g sugar, the beaten eggs, vanilla and zest. Add pudding mixture, 500 ml reserved milk and oil. Whisk for at least 1 minute until emulsified with no separated oil. Keep chilled while making the base.

  2. Line a springform tin 26 cm across and 6 cm high with paper. Mix flour, 60 g reserved sugar, vanilla sugar and salt. Add soft butter and bring together without prolonged kneading. Press over the base without sides and prick. Pre-bake for about 14 minutes in a preheated conventional oven at 200 °C. Remove with oven gloves and reduce to 160 °C.
