Ingredients

  • 2 garlic cloves
  • 1 ripe tomato
  • 1 raw monkfish frame for stock
  • 200 g whole raw prawns
  • 8 live mussels
  • 1 trimmed boneless raw monkfish tail
  • 1750 ml water
  • 500 g dry wheat fideuà noodles
  • 45 ml olive oil
  • 1 tsp sweet paprika
  • 1 pinch of saffron threads
  • 1 pinch of fine salt
  • 4 whole raw langoustines

Preparation

  1. Scrub and debeard the mussels. Discard broken ones or those that do not close. Peel the prawns and keep heads and shells. Put all the water in a pan with fish frame, heads and shells. Simmer for 20 min. Open the mussels in this stock during cooking, removing them as they open. Discard unopened mussels. Keep the mussels on a plate and strain the stock.

Sear monkfish, peeled prawns and langoustines for about 4 min, turning, then set aside. Cook tomato in this oil for about 7 min until reduced, then add the mortar mixture. Fry the noodles for about 2 min, then add paprika.

Noodles should be tender and fish and crustaceans opaque throughout. Cook gently for longer if needed. Serve immediately.
