Ingredients

  • 200 g carrots
  • 60 g celery stalk
  • 120 g celeriac
  • 150 g onions
  • 15 g fresh parsley
  • 180 g leeks
  • 680 g potatoes
  • 30 g unsalted butter
  • 1920 ml ready-to-use beef stock
  • 0.2 g dried bay leaf
  • 1 g dried marjoram
  • 0.5 g ground nutmeg
  • 213 g dry pearl barley
  • ≈ ¼ tsp ground black pepper
  • 3 g fine salt
  • 0.5 g dried thyme
  • 230 g ready-to-eat cooked boneless smoked Kasseler pork

Preparation

  1. Peel the onions, carrots, celeriac and potatoes. Trim and wash the leeks and celery. Wash, dry and trim the parsley. Rinse the barley in a sieve under cold water and drain. Wash and slice leeks and celery. Chop onions, dice carrots and celeriac small, and cut potatoes into roughly 2 cm cubes. Dice the already cooked pork and chop parsley, keeping them separate.

  2. Melt all the butter in a large pot. Soften onion, leek, carrot and both celeries for about 7 min, stirring. Add barley for 2 min, then all the stock, bay, marjoram, thyme, salt, pepper and nutmeg. Bring to a simmer and cook partially covered for about 40 min, stirring the bottom, until the grains have begun to soften.

    1920 ml ready-to-use beef stock
    0.2 g dried bay leaf
    1 g dried marjoram
    0.5 g ground nutmeg
≈ ¼ tsp ground black pepper
    3 g fine salt
    0.5 g dried thyme
    • large lidded pot
    • spoon
  3. Add potatoes and simmer gently for about 25 min until potatoes and barley are tender. During the last 10 min of this cooking time, add all the already cooked pork and stir: it must be piping hot at 75 °C for 30 s. Watch to prevent sticking and extend gentle covered cooking if the grain needs it. Remove bay and divide all the stew with all the parsley.
