Ingredients
- 500 g unpeeled floury potatoes
- 1 medium egg, size M
- 2000 ml cooking water
- 90 g plain wheat flour
- 60 ml sunflower oil
- 50 g seedless raisins
- 6 g fine salt
- 50 g white sugar
- 10 g icing sugar
- 8 g vanilla sugar
- 250 g firm low-fat quark
Preparation
Peel potatoes, cut into even chunks and place in a saucepan with water and salt. Bring to a boil in about 10 minutes, then simmer for about 25 minutes until knife-tender. Drain thoroughly, mash without liquid and spread in a dish. Cool completely, about 40 minutes depending on room temperature. Most cooking water and salt are drained away.

Crack the egg and mix it with the low-fat quark and both sugars. Add cold potatoes, flour and raisins. Combine without prolonged kneading. On baking paper shape a log about 8 cm in diameter. Cut about 10 pancakes of roughly 100 g dough and 1.5 cm thickness, depending on peeling loss and moisture. Handle with a spatula if sticky, without adding unlisted flour.

Heat some oil in a large frying pan for about 5 minutes over low to medium heat. Add pancakes without crowding and fry for about 5 minutes per side until golden with set centres. Lower the heat if browning too fast. Keep the first pancakes warm and use the remaining oil for later batches. Dust with icing sugar and serve hot.
