Aragonese bean, rice and potato stew, recao

Ingredients
- 20 g garlic
- 150 g onions
- 500 g raw potatoes
- 1600 ml water
- 0.4 g dried bay leaves
- 300 g dried white beans
- 30 ml olive oil
- 4 g ground sweet paprika
- 150 g raw white short-grain rice
- 5 g fine salt
Preparation
Rinse and sort the beans, then cover generously with soaking water in a container. Refrigerate for about 720 min. Drain and discard the soaking water.

Peel and chop the onion and garlic. Put the drained beans, onion, garlic, oil and bay leaves in a pot with 1400 ml fresh water. Boil vigorously for 10 min, then lower the heat, cover and simmer for about 80 min. Continue covered if needed until the beans are almost tender when pressed with a fork.

Peel the potatoes and cut them into pieces about 2 cm across, snapping the last part of each cut. When the beans are almost tender when pressed with a fork, add the potatoes with the paprika and salt. Stir gently and simmer covered for 10 min.

Add the rice and remaining 200 ml water, return to a simmer and cook partly covered for about 18 min. Stir gently now and then to prevent sticking. Check the rice, beans and potatoes are tender. The rice should absorb some broth while the dish stays lightly soupy. Continue gently if needed.
