  • 8 g garlic
  • 200 g onions
  • 5 g fresh parsley
  • 1 egg
  • 30 g wheat flour
  • 100 ml prepared fish stock
  • 40 ml olive oil
  • 20 ml lemon juice
  • 100 ml plain tomato sauce
  • 2 g salt
  • 100 ml dry cider
  • 800 g skinless boneless hake fillets

Preparation

  1. Lower the egg into simmering water and cook for 10 minutes. Cool under running water, peel and remove the yolk. Meanwhile, peel the onion and garlic and chop them. Wash and dry the parsley, then chop it.

    • slotted spoon
    • knife
    • chopping board

  2. Pour the lemon juice over the hake and leave for 5 minutes while the egg cools. Pat dry, season with the salt and dust lightly with flour, shaking off the excess.

  4. Soften the onion and garlic in the same pan over medium heat for 8 minutes. Add the tomato sauce and cook for 3 minutes. Mash the yolk with the parsley and a little of the measured cider. Add with the remaining cider and stock.

    100 ml dry cider
