Ingredients

  • 1500 g raw butternut squash with skin and seeds
  • 2 garlic cloves
  • 1 onion
  • 2 garlic cloves for the yogurt sauce
  • ½ tbsp salt for the yogurt sauce
  • 2 cups of plain unsweetened yogurt
  • ½ tsp ground turmeric

  • ½ tsp hot chilli flakes
  • 4 tbsp vegetable oil
  • ½ tsp sweet paprika
  • 1 pinch of salt — optional

Preparation

  1. Preheat the oven to 160 °C. Wash and cut the squash into large wedges and remove the seeds. Keep the skin on for this cooking stage. Brush the flesh with 2 tbsp oil. Roast for about 45 min until tender and lightly browned. Remove with oven gloves, cool for 5 min and carefully lift the flesh from the skin.
