Ingredients

  • 8 g garlic
  • 150 g spring onions
  • 10 g fresh parsley
  • 800 g waxy potatoes
  • 150 g beaten whole egg without shell
  • 700 ml prepared vegetable stock
  • 70 g wheat flour
  • 170 ml olive oil
  • 0.1 g saffron threads
  • 3 g salt
  • 100 ml dry white wine

Preparation

  1. Peel the potatoes and slice 1 cm thick. Wash and trim the spring onions. Peel the garlic. Wash and dry the parsley. Chop the spring onions and parsley. Crush the garlic and saffron in a mortar and mix with the wine. Crack the eggs into a bowl, beat them and weigh the stated amount without shell. Add the salt.

  2. Put 60 g flour on a plate. Coat the slices in flour, then beaten egg. Heat 150 ml oil in a frying pan. Fry in small batches for about 3 minutes each side, without cooking the centres through. Drain on kitchen paper. Discard leftover coating that touched raw egg.

  3. Heat the reserved 20 ml oil in a wide sauté pan. Soften the onions for 5 minutes. Add the reserved 10 g flour and stir for 1 minute. Add the wine, garlic and saffron mixture. Simmer for 2 minutes, then stir in the stock.

  4. Arrange the potatoes in the sauce, which should nearly cover them, without excessive overlap. Partly cover and simmer for about 20 minutes until a knife slides in easily. Gently shake the pan rather than breaking the slices by stirring. Add the parsley and serve hot.
