Use a pie dish about 30 × 23 cm and 6.5 cm deep. Roll the pastry on the reserved 15 g of flour. Cut a lid extending 1 cm beyond the dish and 6 cm-wide strips from the trimmings. Grease the rim and pie funnel with 5 g of butter. Line the rim with the strips extending down the sides. Stand the funnel in the centre and add cold filling without overfilling. Use the reserved 10 ml of water to moisten joins, add the lid and seal.
