Ingredients
- 2 g basil leaves
- 4 g fresh thyme leaves
- 150 g onions
- 61 g unsalted butter
- 170 g grated Emmental
- 710 ml whole milk
- 4 pieces of raw whole eggs in their shells
- 225 g cooked ham without rind
- ≈ ¼ tsp ground black pepper
- 3 ml hot sauce
- 100 g fine yellow cornmeal
Preparation
Preheat a conventional oven to 190 °C. Grease a sufficiently deep baking dish with 5 g butter. Bring the milk to a simmer, gradually whisk in the cornmeal and cook gently for about 5 min until thick. Remove from the heat and cool for about 10 min so the yolks do not cook on contact.
