Ingredients

  • 120 g red onion
  • 2 tsp cumin
  • 250 ml water
  • 300 g wheat flour
  • 40 ml olive oil
  • 4 g salt
  • 100 g dry fine wheat semolina

Preparation

  1. Mix the flour, semolina and salt; gradually add the water and knead for 8 minutes to make a soft dough. Shape into 4 balls, coat with a quarter of the oil and leave covered for 20 minutes.

    250 ml water
    300 g wheat flour
    40 ml olive oil
    4 g salt
100 g dry fine wheat semolina
    • mixing bowl
  2. While the dough rests, peel and chop the onion. Sauté it in a quarter of the oil for 10 minutes with the cumin, then leave to cool slightly.

    120 g red onion
    2 tsp cumin
    • knife
    • frying pan
  3. Using the remaining oil to oil the work surface, flatten each ball very thinly. Place a quarter of the filling in the centre and fold in the sides to form a square.

  4. Cook in a frying pan for 3 to 4 minutes on each side, in two batches if necessary, until the dough is golden and cooked through.
