Ingredients

  • 120 g red onion
  • 150 g red pepper
  • 2 tsp cumin
  • 250 ml water
  • 300 g wheat flour
  • 40 ml olive oil
  • 4 g salt
  • 100 g dry fine wheat semolina

Preparation

  1. Mix the flour, semolina and salt. Gradually add the water and knead for 8 minutes to make a soft dough. Shape into 4 balls, coat with a quarter of the oil and leave covered for 20 minutes.

    250 ml water
    300 g wheat flour
    40 ml olive oil
    4 g salt
100 g dry fine wheat semolina
    • mixing bowl
  2. While the dough rests, peel the onion, wash and deseed the pepper, then chop both. Fry in a quarter of the oil for 10 minutes with the cumin. Leave to cool until lukewarm.

    120 g red onion
    150 g red pepper
    2 tsp cumin
    • knife
    • frying pan
  3. Using the remaining oil to oil the work surface, flatten each ball very thinly. Divide the filling equally between the pieces of dough and fold in the sides to form a square.

  4. Cook in a frying pan for 3 to 4 minutes on each side, in two batches if necessary, until the dough is golden and cooked through.
