Ingredients

  • 225 g brown button mushrooms
  • 1 onion
  • 50 g ready-to-use crispy fried onions
  • 1 whole garlic bulb
  • 3 g garlic powder
  • 800 g canned green beans, drained weight
  • 15 ml sunflower oil
  • 20 g inactive nutritional yeast flakes
  • ≈ ¼ tsp ground nutmeg
  • 2 g onion powder
  • 6 g fine salt
  • 0.5 g dried thyme
  • 300 g plain extra-firm silken tofu
  • 60 ml unsweetened plain soy milk

Preparation

  1. Heat the oven to 190 °C conventional. Drain the green beans and weigh them drained. Peel and chop the onion. Separate the garlic bulb into cloves, peel and chop them. Heat 7.5 ml oil in a frying pan. Soften the onion for about 5–7 min until translucent. Add the garlic and cook for another 2–3 min without burning it. Transfer the cooked onion and garlic to a blender with the silken tofu, soy milk and nutritional yeast. Blend until smooth and creamy.
