Ingredients

  • 1 clove of garlic
  • 2 brown onions
  • 8 potatoes
  • 1.5 kg pork roasting joint
  • 1 bouteille de 12 oz blonde beer
  • 500 ml water
  • 2 tbsp caraway seeds
  • 1 pinch of pepper — optional
  • 1 pinch of salt — optional

Preparation

  1. Preheat the oven to 190 °C. Pat the pork dry without washing it and score the fat in a crosshatch pattern. Peel and crush the garlic and rub it over the pork. Season with salt and pepper if you like. Peel and slice the onions into rings.

  2. Peel the potatoes and cut them into wedges. Pour 250 ml of water into a roasting dish. Set the pork in it, fat side down, with half the caraway and half the onions. Arrange the potatoes around the pork and roast for 1 hour at 190 °C.

    2 tbsp caraway seeds

  3. When the potatoes are tender, remove them and cover with aluminium foil. Turn the pork fat side up, then add the remaining caraway seeds and finely sliced onions.

  5. Use a thermometer to check that the meat is fully cooked at the centre, reaching at least 75 degrees Celsius for 30 seconds. Remove the meat and leave to rest for 10 minutes.

  6. Deglaze the hot roasting tin with the remaining beer and the remaining 250 ml of water, minus any water already added during cooking. Scrape up the browned bits and heat for a few minutes.
