Ingredients

  • 6 g ground coriander
  • 300 g tomato ketchup
  • 1000 g small skin-on potatoes
  • ≈ ¼ tsp ground cayenne pepper
  • 600 g raw pork bratwurst
  • 12 g mild curry powder
  • 120 ml sunflower oil
  • 400 ml apple juice
  • 8 g sweet paprika
  • 40 ml soy sauce
  • 6 g fine salt
  • 40 g sugar
  • 500 g canned diced tomatoes with juice

Preparation

  1. Wash the potatoes. Heat a fan oven to 180 °C. Cut the potatoes into even wedges and toss with 40 ml oil, all the paprika and 4 g salt. Spread without overlapping on trays and roast for about 40 minutes, turning halfway, until tender inside and browned at the edges.

  2. Reduce the apple juice by half in a saucepan, about 8 minutes depending on the pan width. Add ketchup, tomatoes with all their juice, soy sauce, curry powder, coriander, cayenne, sugar and the remaining 2 g salt. Simmer for 5 minutes, stirring, then blend carefully with an immersion blender and keep hot.

  3. Heat the remaining 80 ml oil in a frying pan. Brown the sausages over medium heat for about 15 minutes, turning regularly, until the centre reaches at least 75 °C for 30 seconds. Extend cooking if needed. Drain away residual fat and cut into bites on a clean board. Serve with all the hot sauce and potatoes.
