Ingredients

  • 250 g plain frozen pitted cherries
  • 180 g cold 35% whipping cream
  • 100 g dark baking chocolate
  • 8 ml cold water
  • 10 g cornstarch
  • 1 vanilla pod
  • 25 ml pure cherry juice
  • 105 g white sugar
  • 100 g plain dense rye pumpernickel bread
  • 500 g firm low-fat quark

Preparation

  1. Split the vanilla pod, scrape out its seeds and reserve them for the cream. Put pod, frozen cherries, juice and 25 g sugar in a saucepan. Gently heat for about 10 minutes until boiling, stirring without crushing all the fruit. Mix starch with cold water, add and return to a boil. Gently cook for 3 minutes, stirring until thickened. Remove pod and cool completely in a shallow dish for about 30 minutes.

  3. Chop chocolate and finely crumble pumpernickel. Layer quark cream, cooled cherries, chocolate and bread in dessert dishes. Cover and refrigerate for at least 60 minutes before serving so the bread softens slightly.
