Ingredients

  • 1 unwaxed lemon
  • ⅛ tsp ground ginger
  • 75 ml whole milk
  • 1 medium egg
  • 25 g ground almonds
  • 60 ml water
  • 250 g plain wheat flour
  • 1 tsp baking powder
  • ⅛ tsp ground white pepper
  • 0.5 g fine salt
  • 150 g granulated sugar
  • 200 g icing sugar
  • ⅛ tsp ground cardamom
  • ⅛ tsp ground cloves

Preparation

  1. Wash the lemon and finely grate its zest, avoiding the white pith. Mix flour, baking powder, pepper, cloves, ginger, cardamom, salt and sugar. Crack the egg, then add it with the zest, almonds and milk and knead just to a slightly sticky dough. Shape logs in food wrap without extra flour. Seal and refrigerate for at least 480 minutes.

Use for the recipe: half an unwaxed lemon (prepare 1 unwaxed lemon).
