Ingredients

  • 1 whole white cabbage
  • 2 garlic cloves
  • 1 large onion
  • 400 ml tomato passata
  • 1 egg
  • 500 g raw minced pork
  • 1 cup of ready-to-use stock
  • 2 tbsp vegetable oil
  • 1 tsp dried marjoram
  • ½ tsp ground nutmeg
  • 1 tsp sweet paprika
  • 1 pinch of ground black pepper
  • 100 g uncooked white rice
  • 1 pinch of salt

Preparation

  1. Wash the cabbage. Remove damaged leaves and the cabbage core. Lower the cabbage into a large saucepan of boiling water and gently detach the leaves as they soften. Drain and cool slightly. Shave down thick ribs without cutting through the leaves.

    1 whole white cabbage
    • saucepan
    • tongs
    • colander
    • knife
    • chopping board
  2. While the cabbage cools, simmer the rice in a saucepan of water for about 8 min, leaving it firm. Drain and cool. Peel and chop the onion and garlic, then fry in the oil until translucent. Cool for 10 min.

    2 garlic cloves
    1 large onion
    2 tbsp vegetable oil
    100 g uncooked white rice
    • saucepan
    • colander
    • knife
    • chopping board
    • frying pan
    • spatula
  3. Mix the raw pork with the cooled rice and aromatics, egg, marjoram, nutmeg, paprika, salt and pepper. Divide the filling between the leaves. Fold the sides in and roll to enclose the filling. Line a casserole with remaining small leaves and pack the rolls closely on top, seam-side down.

    1 egg
    500 g raw minced pork
    1 tsp dried marjoram
    ½ tsp ground nutmeg
    1 tsp sweet paprika
1 pinch of ground black pepper
    1 pinch of salt
    • mixing bowl
    • spoon
    • saucepan with lid
  4. Mix the passata and stock and pour into the casserole. Bring to a simmer and cover. Cook gently for about 90 min until the cabbage is tender and the filling cooked through. If the sauce reduces too quickly, add a little hot water to keep the base moist.

    400 ml tomato passata
    1 cup of ready-to-use stock
    • saucepan with lid
