Ingredients

  • 3 fresh thyme sprigs
  • 3 carrots
  • 2 bay leaves
  • 6 garlic cloves
  • 1 garlic bulb
  • 300 g raw pork rind
  • 2500 g raw partly boned leg of lamb
  • 300 g raw pork backfat
  • 100 ml cognac
  • 2 tbsp tomato paste
  • 500 ml water
  • 2 tsp veal stock powder
  • 100 ml vegetable oil
  • 1 pinch of ground black pepper
  • 1 pinch of fine salt
  • 100 ml dry white wine — optional

Preparation

  1. Ask the butcher to partly bone the leg, leaving the shank bone, and lard it with the pork fat. Heat the oven to 150 °C. Peel and slice the carrots. Halve the garlic bulb and leave the cloves unpeeled. Dissolve the stock powder in the water.
