Ingredients

  • 200 ml whipping cream
  • 1 jointed rabbit
  • 15 ml water
  • 1 tbsp cornflour
  • 3 tbsp sunflower oil
  • 3 tbsp sweet coarse-grain mustard
  • ¼ tsp ground black pepper
  • 1 tsp drained green peppercorns in brine
  • 1 tsp fine salt
  • 250 ml dry red wine
  • 2 tbsp lingonberry preserve

Preparation

  1. Select the pieces corresponding to the listed quantity of rabbit for your portions. Heat the conventional oven to 200 °C. Pat the rabbit pieces dry. Heat the oil in a large frying pan and brown on all sides for about 10 minutes, working in batches if needed. Season with salt and pepper, then spread with mustard. Arrange in a roasting dish and pour the wine around them.
