Ingredients
- 550 g fresh button mushrooms
- 1 white cabbage
- 2 medium onions
- 1 small onion
- 30 g butter
- 250 ml cream with 30% fat
- 1125 ml vegetable stock
- 750 ml water
- 5 g plain wheat flour
- 375 ml dry buckwheat groats
- 40 ml sunflower oil
- ≈ ¼ tsp ground black pepper
- 6 g fine salt
Preparation
Remove damaged leaves and cut out the cabbage core. Lower the cabbage into a large pot of boiling water. After about 10 minutes, peel off the outer leaves as they soften. Return the cabbage to the water between removals if needed. Drain the leaves and shave down their central ribs without cutting through.
